Raw Organic Cuisine

from my good friend Juliano's Book RAW:The Uncook Book

Phat Mushroom Soup
[make sure to only use Organic ingredients whenever possible]

1/4 cup fresh cilantro, chopped and moderately packed
1 tablespoon fresh basil leaves, chopped
2 tablespoons fresh dil, de-stemmed and chopped
1/2 teaspoon pineapple sage leaves, chopped
1/2 teaspoon fresh lemon thyme, de-stemmed and chopped
1/2 teaspoon fresh oregano leaves, chopped
1 teaspoon fresh parsley, chopped
3/4 cup tomato{preferably orange cherry tomatoes)
1/4 cup olive oil
3 tablespoons Nama Shoyu or 2 teaspoons Celtic sea salt
1/4 cup Rejuvelac, fresh coconut water, seaweed water, vegetable broth, filter water or fresh-squeezed orange juice
1/2 teaspoon fresh squeezed orange juice, optional
1/2 teaspoon minced ginger, optional
1/2 teaspoon minced garlic. optional

Place all soup ingredients in blender and blend for 30 to 45 seconds, until just smooth (you should still be able to see pieces of the herbs and tomato). Pour into serving bowls and float garnishes on top in following order:
portabella, dill, Mellowkraut, bell pepper, flower petals. Be sure to add the portobello first; it's buoyant and acts as a raft for the other garnishes.) Eat the soup immediately after blending.
